Simple Steps to Sunbath Your Mushrooms
Cluster Separation
Break the individual caps apart from the main cluster of oyster mushrooms for increasing surface area, allowing more sunlight light to hit the ergosterol.
Gills Up
Place the mushroom caps on a tray with their gills facing upward. The gills contain the highest concentration of ergosterol.
Expose to Direct Sunlight
Place the tray outside in direct, midday sunlight (between 10:00 AM and 3:00 PM) for 15 to 30 minutes.
Bring Them In
After their sunbath, your mushrooms are packed with Vitamin D. You can cook them immediately or store them.
